Spinach Mushroom Seaweed Salad
Serves 4
1 Large container Baby Spinach
10 Baby Portabella Mushrooms
2 Mandarin Oranges
1 Cucumber
2 Carrots
1 package small roasted nori squares
2 medium tomatoes
1/2 cup garbanzo beans
4 small artichoke hearts
Bragg's Aminos or Soy sauce
Small piece of Ginger to taste (juiced or hand squeezed)
Olive Oil
sesame seeds or Eden Gomasio
Cut up fruits and vegetables and shred carrot and put it in bowl with spinach and beans. Take nori out of package and tear into small pieces. Add sesame seeds or Gosame condiment.
Slice mushrooms and sauté in olive oil on medium heat. Add aminos and ginger juice after mushrooms are cooked and turn off heat and leave covered.
After a couple minutes add mushrooms and juices into the salad bowl and stir until mixed well slightly cooking the spinach.
Serve warm and enjoy!
